Academy AgriChef Campania

GB Agricola is the only location of the Agrichef Academy, the training school for agritourism operators who are members or future members of the Campagna Amica Agritourism network.

The company's facilities include Casa Barbato, an innovative food and wine space designed to showcase local products, particularly the renowned Montoro Copper Onion. The restaurant stands out for its cutting-edge cuisine and sustainable design, made from recycled cardboard.
The initiative includes regular training courses, developed in partnership with expert chefs and food and wine schools, aimed at training "agri-chefs," professionals who combine culinary skills with a solid knowledge of agricultural management.
Terranostra has established a national register of agri-chefs, certifying this qualification to ensure the recognition of professionals working with agritourism businesses participating in the Campagna Amica network. "Investing in advanced training," emphasizes Coldiretti, "is essential to raising the quality of Campania's agritourism, making it increasingly competitive and authentic."

The courses

The course will place the utmost emphasis on showcasing local products and traditional recipes, innovating them both technically and in terms of execution. Therefore, the course topics will focus specifically on cooking technologies and techniques, optimizing and managing preparation times, preservation techniques, dish and menu pricing, showcasing the product used, table setting and plating, and food-wine and food-glass pairing.

"We are proud to be able to bring an idea to life," explains Manuel Lombardi, president of Terranostra Campania, "created to support Coldiretti's project for Italian DOC agritourism. Our agritourism businesses have experienced a crisis in recent years, especially in terms of credibility. Too many agritourism businesses with dubious agricultural identities and poor professional growth have created the negative image of second-rate restaurants offering cheap food. In reality, this is not the case. Added to this is the lack of protection under current regional regulations, which we have requested be revised by introducing more stringent selective mechanisms that benefit Campanian products. The Agrichef Academy aims not only to improve culinary skills, but to train professionals capable of welcoming and presenting the region. As President Scaramuzza aptly said, for us, a star doesn't make the difference; if anything, it's a stable."

"The launch of this school for farmers in the kitchen," adds Gennarino Masiello, president of Coldiretti Campania, "is an extraordinary opportunity to draw a line under the sea. Raising the bar of transparency at the table is the only real lever for growth in our agriculture. Agritourism operators are farmers who have chosen to open the doors of their homes and offer tastings of the products of their land and their region. Anyone who doesn't identify with this definition cannot use the term 'agritourism'. At the same time, anyone who complies with the rules cannot even consider meeting the growing demands of tourists, both Italian and foreign, without ongoing training. This is the purpose of the Academy. This project embodies the entire cultural paradigm that Coldiretti revolves around three concepts: quality, traceability, and distinctiveness. The key role of agritourism lies in the direct relationship with consumers, which has grown thanks to local markets. Disappointing or deceiving those who sit at the table of agricultural businesses calls into question the good name of an entire region."
